Banana Cake Bread
¾ cup butter – softened
2 cups sugar
2 eggs
3 cups all purpose flour
1 ½ t. baking powder
½ t. salt
1 ½ t. soda
1 cup plus 1 T. French Vanilla liquid Coffee Mate (in the dairy case) mixed with 1 T. lemon juice
½ t. vanilla extract
2 mashed, ripe bananas

Cream butter and sugar in mixing bowl until light and fluffy. Beat in eggs one at a time, beating well after each addition. Sift dry ingredients together. Add dry ingredients to creamed mixture alternately with the Coffee Mate, beating well after each addition. Add vanilla and bananas, mix well. Pour into lightly greased and floured 10 inch tube pan. Bake at 350 degrees for one hour or until cake tests done.
